The ingredients  you need to make egg tofu with mushroom gravy are oil, egg, tofu, ginger, onion, mushrooms, enoki mushrooms, garlic, starch, water, soya sauce, fish, sauce, brown, rice, one, green, onion, sliced and salt.

Preparation method

1. Choosing the mushroom and egg tofu

As these are the main ingredients of the dish, you have to choose it fresh and juicy so that you can add flavors in your dish and make your dish a perfect one.

You have to choose fresh mushrooms and egg tofu for your dish as they will give the texture and core flavors of the dish, so try to choose the good ones.

2. Washing the vegetables 

Now after choosing you have to wash all the vegetables that you are using in the dish with clear water, to ensure that there is no dirt in it.

3. Cutting the vegetables

Firstly  you have to cut the mushroom, you have to peel the mushroom and then you have to cut the stem of it for enoki mushroom. You have to cut the extra part from it. And then cut it into two pieces.

Now for the onion, you have to finely chop the onion and garlic after peeling it. Same with ginger. You have to finely chop the ginger as well after peeling it. Also don’t forget to roughly chop the green onion for garnishing the dish.

4. Slicing the egg tofu

You have to slice one roll of egg tofu into medium to large pieces so that it can add its texture and juices to the dish and also cook well in the cooking time.

5. Cooking The egg tofu

Now, for cooking the egg tofu, you have to take a pan on medium heat. Then you have to add oil and now you have to add the egg tofu and cook it until the egg tofu is cooked properly and changes its color into golden brown.

After it changes its color it is ready. It will take around 5 to 10 minutes now you have to take it out on a plate. And keep it aside.

6. Making the gravy

Now, in the same plan, you have to add 1 teaspoon of oil, add ginger and garlic and cook it until it’s translucent and releases fragrance from it then you have to add the mushrooms which you had roughly chopped. Then you have to add the garlic and cook it for sometime until the mushrooms are brown and slightly shrunken and dry.

Now we have to take a small bowl and now you have to add cornstarch and water as well as soya sauce, fish sauce then you have to mix the mixture until it’s mixed well then you have to add it in the mixture that we are preparing and cook it for 5 to 7 minutes until the gravy start became thick in texture.

After that you have to add the egg tofu and then you have to toss it in the sauce that you had made with mushrooms and all toss it gently so that the tofu does not break as the tofu is very soft.

7. Boiling the rice

Take a bowl, now add your raw rice and wash it with clear water to remove all the dirt from it. Then you have to take a saucepan, heat it over medium high flame, add one and a half cups of water and boil it for sometime. Add a pinch of salt. You can skip it also if you don’t like salt now you have to add your brown rice and cook it until your rice is cooked. Then you have to strain the rice from the water and take it out on a plate or a bowl.

Presentation

Now in a white plate, add your boiled brown rice, your prepared egg tofu, mushroom gravy and garnish it with green onions to make it more beautiful and attractive.

  1. Use good quality mushrooms and egg tofu.
  2. Don’t finely chop the mushrooms, it will ruin the flavor of it.
  3. Don’t overcook the gravy as it will ruin the flavors of the whole dish
  4. Don’t overcook the egg tofu as it will ruin the actual taste and texture of the egg tofu.
  5. When you are adding cornstarch mixture in the gravy mixture, do it in multiple steps and mix it continuously without any break. Don’t do it in a single step then it will produce lumps in the gravy.
